What You’ll Need
- 4 large eggs or egg alternative
- 2 cups milk alternative
- ½ cup sugar
- 3 Tbsp. butter alternative, melted
- ¼ tsp. ground cardamom
- ¼ tsp. ground cinnamon, plus extra for topping
- 1 tsp. salt
- 3 ½ cups firm white or wheat bread, cut into ½-inch cubes (gluten-free, if preferred)
- 1 large or 2 medium Granny Smith apples, peeled, cored and cut into ½-inch cubes
- 1 ½ cups Vevan Ched-Shred
Cardamom Maple-Butter Sauce
- 8 oz. butter alternative
- ⅓ cup maple syrup
- ¼ tsp. ground cardamom
Here’s How
- Preheat oven to 350°F. Grease a 7-by-11-inch or 8-inch-square glass baking dish and set aside.
- In large bowl, whisk eggs to combine. Add milk, sugar, butter, spices and salt. Whisk again until combined. Add bread, apples and Vevan Ched-Shred and stir gently to combine.
- Transfer mixture to prepared dish. Dust lightly with cinnamon. Bake for about 40 minutes, or until pudding is golden on top and set all the way to center.
- To make sauce: In small saucepan, melt butter over medium-low heat. Whisk in maple syrup and cardamom until blended. Drizzle over warm bread pudding just before serving.
