Awesome Apple Bread Pudding

What You’ll Need

  • 4 large eggs
  • 2 cups milk alternative
  • ½ cup sugar
  • 3 Tbsp. lactose-free or plant butter, melted
  • ¼ tsp. ground cardamom
  • ¼ tsp. ground cinnamon, plus extra for topping
  • 1 tsp. salt
  • 3 ½ cups firm white, wheat or gluten-free bread, cut into ½-inch cubes
  • 1 large or 2 medium Granny Smith apples, peeled, cored and cut into ½-inch cubes
  • 1 ½ cups Vevan Ched Shred

Cardamom Maple-Butter Sauce

  • 8 oz. lactose-free or plant butter
  • ⅓ cup maple syrup
  • ¼ tsp. ground cardamom

Here’s How

  • Preheat oven to 350°F. Grease a 7-by-11-inch or 8-inch-square glass baking dish and set aside.
  • In large bowl, whisk eggs to combine. Add milk, sugar, butter, spices and salt. Whisk again until combined. Add bread, apples and Vevan Ched Shred and stir gently to combine.
  • Transfer mixture to prepared dish. Dust lightly with cinnamon. Bake for about 40 minutes, or until pudding is golden on top and set all the way to center.
  • To make sauce: In small saucepan, melt butter over medium-low heat. Whisk in maple syrup and cardamom until blended. Drizzle over warm bread pudding just before serving.
