What You’ll Need
- 8 small or 4 large, sweet potatoes – orange, white or purple
Spiced UnCream Cheese Whip:
- 1 tub (8 oz.) Vevan Plain UnCreamCheese
- 1 Tbsp. brown sugar
- ¼ tsp. ground clove
- Zest of ½ an orange
- 3 Tbsp. fresh orange juice
Cranberry Orange Relish:
- 12 oz. fresh cranberries, washed and dried
- Zest of 1 orange
- 2 medium oranges, peeled and diced finely
- ¼ cup sugar
- ¼ tsp. ground cardamom
- ½ cup candied pecans, roughly chopped
Here’s How
Prep:
- Bake the sweet potatoes as follows:
- Preheat the oven to 425°F. Line a baking sheet with parchment paper or aluminum foil. Use a fork to poke holes into the sweet potatoes and set them on the baking sheet. Roast for 40 to 50 minutes, or until the skin has puffed up and you can easily pierce them with a fork.
Spiced UnCreamCheese Whip:
- Using a stand mixer or electric hand mixer, whisk all ingredients together until smooth.
- Refrigerate until ready to use. (Can be made a day ahead.)
Cranberry Orange Relish:
- Place the cranberries in a food processor and pulse until finely chopped. In a medium bowl, add the cranberries and rest of the ingredients and stir to combine.
- Refrigerate until ready to use. (Can be made a day ahead. Stir in nuts prior to serving to maintain crunch.)
Assemble your dish:
- Halve each sweet potato lengthwise. Top with the prepared spiced Vevan UnCreamCheese whip and cranberry orange relish.
