Summer Glow Green Goodness Salad with Vevan Mozza Crisps

What You’ll Need

  • 1 cup Vevan Mozza-Shred
  • 6 cups kale, coarsely chopped
  • 2 Tbsp. sesame oil
  • 8 oz. broccolini/baby broccoli, blanched and coarsely chopped
  • 4 oz. green beans, blanched
  • 4 oz. snow peas, blanched
  • 6 radishes, thinly sliced
  • 4 scallions, sliced into ¼” slices
  • 1 green apple, halved and thinly sliced
  • ½ cup slivered almonds
  • Salt & black pepper to taste

Lime & Maple Dressing:

  • ¼ cup sunflower oil (or other neutral oil like avocado oil or safflower oil)
  • 4 limes, juiced (yields about ¼ cup of juice)
  • Zest from 2 limes
  • 1½ Tbsp. maple syrup
  • ¼ tsp. salt
  • 1/8 tsp. freshly ground black pepper
  • 1 tsp. sesame seeds

Here’s How

Vevan Mozza Crisps:

  1. Place a piece of parchment paper in the microwave large enough to cover the plate at the bottom.
  2. Place teaspoonfuls of Vevan Mozza-Shred onto parchment paper 3 inches apart. Spread out the Mozza-Shred slightly to form 1 ½” disks.
  3. Microwave on high for about 45-60 seconds until the Mozza-Shred turns white and crisp.
  4. Carefully remove the crisps and repeat in batches until all the Mozza-Shred are used up. You will have 25-30 crisps.
  5. Set aside.

Lime & Maple Dressing:

Combine all ingredients and set aside.

Assemble:

  1. Place chopped kale in a large bowl and drizzle with sesame oil. Massage the oil into the kale until coated.
  2. Add the broccolini, green beans, snow peas, radishes, apple, almonds and dressing and toss gently to combine.
  3. Top with Vevan Mozza-Shred crisps.
  4. Season with salt and fresh ground black pepper if desired.
  5. Serve & enjoy!
