Veggie Sandwich

What You’ll Need

  • 2 slices bread, your choice
  • 2 tbsp your favorite sandwich spread, we used Trader Joe’s Vegan Kale, Cashew & Basil Pesto
  • ½ med avocado, sliced
  • 1-2 Slices red onion, thinly sliced
  • 2-3 slices tomato
  • 1 Peruvian cucumber, sliced lengthwise
  • 2 Slices Vevan Ched Melts
  • 2 tbsp shredded carrots
  • ¼ c Alfalfa sprouts
  • ¼ c Micro greens
  • Salt and pepper to taste

Here’s How

  1. Spread 1 tbsp pesto (or your favorite spread) onto each slice of bread. Layer all ingredients on top of each other on one slice of bread, season with salt and pepper, top with 2nd slice of bread. Enjoy!
  2. Serve with your favorite potato chips.
