Whether it’s work or play that makes your days hectic, having delicious plant-based meals you can quickly prepare will make your on-the-go lifestyle a tasty adventure. Thanks to all the great plant-based foods available, whipping up meals in 15 minutes or less is a breeze.

On-the-go plant-based meal planning

Once upon a time, it wasn’t so easy to follow a plant-based diet. That’s because ingredients for plant-based meals were limited, the places to find them were rare, and recipes were often involved and time-consuming. Today, there are many more types and varieties of plant-based foods available at a rising number of stores and lots of quick and simple ways to prepare satisfying dishes whether you adhere to a vegan, vegetarian, or flexitarian diet.

School, work, and fun is keeping us all busy and on-the-go these days. When you have a busy schedule, finding time to prepare meals isn’t always a priority, but planning meals you can quickly prepare that suit your lifestyle is easier than you think.

No more time consuming recipe researching and driving all over town looking for ingredients. Because in as little as 15 minutes, you can whip up recipes that span a variety of tastes, too.
Before you get started, there are some basics you should always have on-hand if you want to have quick plant-based meals ready to grab-and-go when you’re heading out the door.

1) Fresh veggies

If you have limited time:

If you are crunched for time on a regular basis, consider buying your fresh veggies already cleaned and chopped. You can even take this a step further by dividing the portions into smaller containers when you arrive home from the store.

If you have some time:

Consider doing a bulk shopping trip once a week or so. When you get home, dedicate some time to cleaning, chopping, and storing (or even freezing!) vegetables in appropriate portions.

2) Pastas and quick-cook grains and rice

There are a variety of these on the market, so experiment to find something that you like. Once you do, try to cook a large quantity at once and store (or freeze) in smaller portions to make it a breeze to throw-together a quick and satisfying meal.

3) Plant-based quick-serve foods

Dairy-free cheese and meat alternatives will make every dish even better! Consider always having a variety on hand and you’ll always have a quick dish in just minutes.

Now that you have the foods you need, you’re on your path to meal planning success. Consider a day during the week that’s a bit slower paced when you can chop, prep and even pre-cook some meals. Then plan out meals for each day or occasion. Be mindful of your calendar and decide which days you have more time to sit and eat at home and which days you will be on-the-go. Before you know it, you’re prepared for a delicious week ahead.
